We all know that summer is the perfect time to enjoy fresh and vibrant flavors, and there’s nothing like pesto pasta salad, it is a super easy recipe, filled with a lot’s of veggies like-cherry tomatoes, basil pesto, and creamy mozzarella. Pesto pasta salad is best for summer’s as it is light, refreshing, and a delicious dish that is loved by family and kids. It is ideal for a barbecues, picnics, parties, and satisfy the meal on a warm day.

Ingredients
  

  • 12 oz pasta (fusilli, cavatappi, rotini, or your choice)
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh mozzarella
  • cup basil pesto
  • 3 cloves garlic, minced
  • cup corn, fresh or frozen
  • ¼ cup red onion, thinly sliced (optional)
  • 1 tbsp lemon juice
  • pinch red pepper flakes
  • salt and pepper, to taste

Instructions
 

  • Bring a large pot of salted water to a boil and add the pasta into the boiling water and cook as per the package instructions until al dente. Drain and rinse the pasta under the cold water , and transfer it to a large bowl.
  • mix the warm pasta with the garlic, and then add in the cherry tomatoes, corn and red onion. pour the pesto and mix well all the ingredients until everything coated nicely.
  • Add in the red pepper flakes, mozzarella, lemon juice and salt according to your taste, and give everything a good stir until all mixed together
  • Transfer the salad to a serving dish and garnish it with the fresh basil leaves . Serve and enjoy your pesto pasta salad with your loved ones.
