Ingredients
  

For Rice

  • 3 cups Basmati rice
  • 6 cups water (for cooking the rice)

For Vegetable Mixture

  • 2 Carrot (chopped)
  • 3 cups Peas
  • 3 Green Beans (chopped)
  • 3 Potatoes (chopped)
  • 2 bell peppers (chopped)
  • 2 large onions (thinly sliced)
  • 2 medium Tomato (chopped)
  • 2 tablespoons Ginger-garlic paste
  • 2 Green chilis (chopped)

For Spices

  • 2 Bay leaves
  • 4 Cloves
  • 4 cardamom
  • 1 inch piece cinnamon stick
  • 1 teaspoons cumin seeds
  • ½ teaspoons turmeric powder
  • 1 teaspoons red chili powder
  • 1 teaspoons garam masala

Other Ingredients

  • ½ cup Fresh mint leaves (chopped)
  • ½ cup Fresh coriander leaves
  • ½ cup yogurt ( optional, for creaminess)
  • 4 tablespoons oil (for sauteing)
  • Salt (to taste)

Instructions
 

  • Step 1: Prepare the Rice
    Wash the Rice: Drain the soaked Basmati Rice and rinse it with cold water until the water runs clear. This removes excess starch and the rice is not sticky.
    Cook the Rice: Boil 6 cups of water in a large pot. Add the washed rice and some salt. Cook the rice until it is 70% cooked
  • Step 2 :Prepare the Vegetable
    Heat 4 tablespoons of oil in a heavy bottom pot or large wok over medium heat. Add the chopped onions and saute until golden brown. Add the spices bay leaves, cloves, cardamom, cinnamon and cumin seeds and saute for about a minute until the aroma comes out.
    Add ginger-garlic paste and green chillies. Cook for 1-2minutes till the raw smell disappears.
    Add chopped tomatoes and cook till they become soft and oil starts separating from the mixture. Add mixed vegetables and sauté for 5-7minutes, let them soften a little.
    Add turmeric powder, red chili powder and salt to taste. Cook for 2-3 minutes more.
  • Step 3: Layer the biryani
     
    If using curd, whisk it till smooth and mix it with chopped mint and coriander leaves. Add this mixture to the vegetable mixture and cook for 2-3 minutes more.
    Layer partially cooked rice on top of the vegetable mixture. Sprinkle garam masala .Top the rice with the remaining chopped mint and coriander leaves.
  • Step 4: Cook the Biryani
      Cover the pot with a tight-fitting lid. If available, you can seal the edges with dough to prevent steam from escaping. Bring the heat to the lowest setting and cook for25-30 minutes. This will allow the flavors to meld and the rice to cook. After 30 minutes, turn off the heat and let it sit for 10 minutes without opening the lid.

  1. you can use any other rice instead of basmati 
  2. use raita for serving to enhance the taste of biryani
