Step1. Prepare the coffee baseBrew a strong pot of coffee or espresso and let it cool to room temperature. If desired, add a splash of coffee liqueur such as Kahlua for extra flavor.
Step 2. Make the chocolate ganache1. Heat the cream in a small saucepan until it begins to simmer (don't let it boil).2. Remove from heat and pour over chopped dark chocolate.3. Stir slowly until the chocolate is completely melted and shiny. Set aside to cool.
Step 3. Whip the mascarpone creamIn a large bowl, whip the mascarpone cheese with the vanilla extract until smooth.In a separate bowl, whip the egg yolks and sugar until it's light and creamy.Fold the egg mixture into the mascarpone, followed by the whipped cream, to create a fluffy, rich filling.
Step 4. Layer assembly1. Dip each ladyfinger briefly into the cold coffee. Do not let them soak too long to become soggy.2. Place the coffee-soaked ladyfingers in a single layer at the bottom of a serving dish or individual glasses.3. A layer of mascarpone cream on top, chocolate ganache drizzle to follow.4. Repeat the layers until it is full. Top it off with mascarpone
Step 5. FinishSprinkle a little cocoa powder on the top and lavish dark chocolate shavings all over the dish. Let this sit in the fridge for at least 6 hours. More preferably, overnight, until the flavors are melded together.
