Ingredients
  

Main ingredient

  • 10 large, egg whites
  • 1 cup fresh spinach, chopped
  • ½ cup bell peppers, diced
  • ½ cup cherry tomatoes, halved
  • ½ cup onion, finely diced
  • ½ cup mushroom, sliced (sliced)

Herbs and seasoning

  • ¼ teaspoons salt ( adjust to taste)
  • ¼ teaspoon black pepper ( adjust to taste)
  • ½ teaspoon fresh basil or parsley, chopped
  • ¼ teaspoon red pepper flakes, (optional)

optional ingredients

  • ¼ cup feta cheese or shredded low fat cheese
  • 2 teaspoons olive oil or cooking spray

Instructions
 

  • Step1 : Prepare ingredient or preheat oven
    1. Preheat to 375°F (190°C) to ensure your vegetables cook evenly.
    2. Prepare your vegetables by dicing them so that they could be spread out and as evenly as possible in your frittata.
    3. Beat up those egg whites briefly to mix them up together as smooth as you possibly can.
  • Step2 : Saute your vegetables
    1. Place your non-stick, oven-safe skillet on medium heat
    2. Use one teaspoon of olive oil, or a light covering of cooking spray.
    3. Begin by adding the tougher vegetables, such as the onions or bell peppers. Cook for 2-3 minutes over medium-high heat until they just start to soften.Add the softer vegetables - such as spinach and mushrooms - and continue to sauté them until soft, about 2 minutes.
  • Step3 : Season and add the egg white
    1. Season the sautéed vegetables with salt and pepper. If you're using another herb, toss it in now.
    2. Add the beaten egg whites evenly over the vegetables, so they spread out in the pan.
    3. Add cheese on top for flavor and creaminess, if you like.
  • Step4 : cook and bake
    1. Let the egg whites cook on the stovetop for about 2-3 minutes until they have just begun to set around the edges
    2 .Carefully lift the skillet out of the pan and position it in the preheated oven. Bake 10-12 minutes, or until the egg whites are just cooked through and the top is lightly golden.
  • Step5 : serve and enjoy
    1. Remove the skillet from the oven, let it cool for a minute. Cut the frittata into portion-sized pieces. Garnish with some fresh herbs or added seasonings, if you like, and serve it hot.
