Ingredients
  

For the crust

  • cup gingersnap crumbs

For the filling

  • cup unsulphured molasses
  • ½ cup packed brown sugar
  • 2 large egg
  • 1 cup heavy cream
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt

Instructions
 

  • Step 1: make the crust
    1. Preheat Your Oven: Start by setting your oven to 350°F (175°C). You’ll need it warm and ready for your crust.
    2. Mix It Up: In a bowl, combine the crumbs (gingersnaps or graham crackers), sugar, and melted butter. Stir it up until the crumbs feel slightly wet, like damp sand.
    3. shape the crust: Press the mixture into a 9-inch pie pan, using your hands or the back of a spoon to mold it to fit all the way down to the bottom and up to the sides of the pie pan, building little edible walls for your pie filling.
    4. Bake It: Pop the crust in the oven and bake for about 8-10 minutes. You want a lightly browned color and a slight firmness. Let it cool while you deal with the filling.
  • Step 2: Whip Up the Filling
    1. Gather your ingredients: grab a big mixing bowl and all the filling ingredients: molasses, brown sugar, eggs, heavy cream, spices, and salt.
    2. Mix Like a Pro: Beat the eggs with the molasses and brown sugar together until the mixture is smooth and shine-y.
    3. Add the Cream and Spices: Stir in the heavy cream and add all of the spices (ginger, cinnamon, nutmeg, cloves) along with the salt. Stir until just combined and smells like pure holiday magic.
  • Step 3: Fill and Bake
    1. Pour It In: Carefully pour the filling into your cooled crust. Don't need to overcomplicate things at this stage—just spread it around evenly.
    2. Lower the Heat: Bring your oven temperature down to 325°F (160°C). The lower heat is kinder to the filling as the setting process, preventing it from cracking or overcooking.
    3. Bake It to Perfection: Slide the pie into the oven and bake for 45-50 minutes. Check it every few minutes-the middle will be set but still slightly jiggly when gently shaken like a cheesecake.
  • Step 4: Cool, Chill, and Garnish
    1. Let It Cool: When the pie is done baking, take it out of the oven and let it sit on the counter until it cools to room temperature. Don’t skip this step—it helps the filling settle.
    2. Chill Time: Pop the pie in the fridge for at least 2 hours (or overnight if you’re prepping ahead). This makes it firm and easier to slice.
    3. Add Some Flair: Right before serving, dollop on some whipped cream, sprinkle a little cinnamon or nutmeg, and maybe toss on a few pieces of candied ginger for that extra wow factor.
