Step1Roast Sweet Potatoes: Peel and cube two sweet potatoes and roast at 400°F (200°C) until they're soft and caramelized. Remove them from the oven and set aside.
Step2Prepare Bread: Cut into small cubes 6 cups of stale bread, such as brioche or challah.
Step3. Make Custard: Whisk in a large bowl together the heavy cream, milk, eggs, brown sugar, vanilla, cinnamon, nutmeg, ginger, and salt until smooth.
Step4Combine ingredients: Fold in the roasted sweet potatoes and bread. So that everything is coated. Let it sit for 10-15 minutes.
Step5Bake: Pour into a greased baking dish. Sprinkle with pecans or walnuts if desired. Cover with foil and bake at 350°F (175°C) for 45 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden and set
Step6Serve: Serve Warm with caramel sauce or vanilla ice cream
