Sweet potato bread pudding

Ingredients
  

  • 2 medium-sized sweet potatoes, peeled and cubed
  • 6 cups day-old bread (brioche or challah), cubed
  • cups heavy cream
  • 1 cup whole milk
  • 3 large eggs
  • ¾ cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • ¼ teaspoon salt
  • ½ cup chopped pecans or walnuts

Instructions
 

  • Step1
    Roast Sweet Potatoes: Peel and cube two sweet potatoes and roast at 400°F (200°C) until they're soft and caramelized. Remove them from the oven and set aside.
  • Step2
    Prepare Bread: Cut into small cubes 6 cups of stale bread, such as brioche or challah.
  • Step3.
    Make Custard: Whisk in a large bowl together the heavy cream, milk, eggs, brown sugar, vanilla, cinnamon, nutmeg, ginger, and salt until smooth.
  • Step4
    Combine ingredients: Fold in the roasted sweet potatoes and bread. So that everything is coated. Let it sit for 10-15 minutes.

    Bake: Pour into a greased baking dish. Sprinkle with pecans or walnuts if desired. Cover with foil and bake at 350°F (175°C) for 45 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden and set
  • Step6
    Serve: Serve Warm with caramel sauce or vanilla ice cream
